2013 LEFT OF CENTRE CHARDONNAY
Winemaking
The Chardonnay was sourced from two premium vineyards in the Hunter Valley. The fruit was hand picked, and whole bunch pressed. It was then cold settled for two days with minimal finings prior to ferment. The wine was then left on yeast lees for nine months, to build texture and create a smooth silky palate.
Tasting Notes
This is a modern style of chardonnay, no malolactic fermentation and a judicious use of French oak. The result is a fruit driven wine that shows butterscotch, white peach and passionfruit up front followed by vanillin, toast and oak with a hint of struck match. On the palate there is a silkiness from the yeast lees and lingering acid. This wine is great now and will age for the medium term.

2013 LEFT OF CENTRE SHIRAZ
Winemaking
This Shiraz was sourced from the 40 year old Wills Hill vineyard in Pokolbin. The fruit was de-stemed then crushed and cold soaked for two days to extract colour and flavour. This wine was co fermented in an open top vessel and plunged twice daily for 10 days. After pressing the wine was matured for 10 months in French oak.
Tasting Notes
This wine has a lifted and floral nose, showing rose petals, plums, dark cherries and spice. Vanilla, toast and oak support. The result is a light to medium bodied style of wine that is reminiscent of the Hunter Shiraz of old. Enjoy this wine now, but also will reward with careful cellaring over the medium to long term.
